Ingredients
- 4.5 Litres Elenka white base
- Elenka Tiramisu pasteSponge fingers150g Sugar
150g espresso coffee
Chocolate/cacao powder for decoration
Method
- Mix 150ml espresso coffee with 150g sugar and soak sponge fingers in this syrup
- Add 360g of Elenka Tiramisu paste to 4.5 Litres of white base, blend and add to batch machine
- Extract a layer of Tiramisu gelato and then add a layer of sponge fingers and repeat.
- To finish build Napoli high with peaks and insert a few sponge fingers to decorate and sprinkle/sieve cacao powder over top
