Elenka’s Raspberry paste is made from the flesh and juice of raspberries giving it a fresh and exquisite flavour. This teamed up with Elenka’s Nolat base provides a fantastic semi creamy sorbet but also a suitable vegan friendly alternative.
Ingredients
- Hot Water (@50C) 2750ml
- Elenka Raspberry paste 300g
- Elenka Nolat 170g
- Technoice (improver): 35g (Optional but makes smoother product that will last longer in display)
- Dextrose 170g
- Sugar 700g
Method
- Mix dry ingredients together with a spatula
- Add to hot water and blend with hand blender for a minute
- Add raspberry fruit paste and blend until smooth
- Preferably allow to stand for 10 mins- 1 hour (can be left overnight in fridge to mature)
- Add to batch machine
