A luxurious ice cream with contrasting layers of Elenka’s 100% toasted hazelnut or Elenka’s Chocolate Hazelnut paste for the base with a crunchy chocolate hazelnut ripple that does not freeze at low temperatures keeping that creamy ripple oozing throughout!
Ingredients
- 4.5 Litres Elenka White base
- 360g Elenka Nocciola (Hazelnut) Laurus or Giandujotto (Chocolate Hazelnut) paste
- Elenka Otella (Chocolate Hazelnut) 856 ripple
- Broken waffle cone pieces
- Optional- nibbed hazelnuts and Ferrero rocher chocolate to decorate
Method
- Add 360g Elenka Nocciola (Hazelnut) Laurus or Giandujotto (Chocolate Hazelnut) paste to 4.5 Litres of white base, blend well and add to batch machine.
- Coat broken waffle cone pieces in Elenka Otella Chocolate Hazelnut ripple.
- On extraction ripple Elenka Otella Chocolate Hazelnut throughout layers.
- To finish ripple Elenka Otella chocolate hazelnut across top. Can add nibbed hazelnuts and Ferrero rocher sweets as extra decoration.
